Winemaking

Vinification: In the absence of sulphur dioxide and fermented on the
skins.

Second fermentation: In autoclave with the Martinotti method at low
temperatures and sterile bottling.

Aging

In temperature-controlled, stainless steel vats.

Appearance

Straw yellow in colour with tinges of green.

Food Pairing

Ideal as aperitif and with risottos and fish-based dishes.
