It is very dry on the palate with notes of grains and a bitter and persistent finish.

Vinification
Partly white-wine vinification with soft pressing, partly with short maceration.

Appearance
Its straw-yellow, slightly cloudy colour—characteristic of the type—cannot hide the fine and continuous perlage.
Food Pairing
We recommend serving Bottle-fermented sparkling white wine with Culatello di Zibello or with a sea bream in salt.
