Nose

The nose reveals elegant notes of broom, mimosa, tangerine, pear and yellow peach. Also bread crust, ginger, cooking aromas and hints of minerals.

Palate

On the palate, it stands out for its firm structure, the calibrated balance and a great taste-olfactory correspondence. It is also recognisable for its lively freshness and rigor in sapidity. Its persistence is long and the finish suggests notes of citrus and herbs.

Soil morphology: Hilly, calcareous, with moraines and clays, rich in marine sediments.
Exposure: South-east.
Form of training: Modified double arched caning.

Harvest: September.
Yield per hectare: 120 quintals.

Winemaking

Vinification
White-wine vinification, with soft pressing and a maximum yield of 70%.

Primary fermentation
Controlled temperature.

Battonage during storage
Full decanting twice.

Secondary fermentation (prise de mousse)
Long Charmat method and four months on yeasts.



Appearance

Bright straw-yellow colour : enhanced by a very fine and persistent perlage.

Food Pairing

We suggest serving Zero Valdobbiadene Superiore di Cartizze DOCG Brut as an aperitif or paired with oysters, crustaceans and bigoli with fish ragout.
