Siro Merotto

A brief history

The Siro Merotto Company was founded in 1960 by grandfather Giovanni and his son Siro. Today the Nicola tradition continues, cultivating 6 hectares of owned vineyards located on the hills of Col San Martino (TV)
. The wines are produced exclusively with Glera grapes and other old varieties typical of the area.
The vineyards are all on the shore and the slopes reach up to 45%: for this reason, pruning, grass cutting and harvesting are done by hand and in the most natural and eco-sustainable way possible and to preserve the quality and integrity of the grapes. .
The work in the cellar is distinguished by a long refinement of the wines on yeasts and noble lees, in order to obtain the right balance between acidity, minerality and structure.
The second fermentation takes place at low temperatures to enhance its elegance and create a "perlage" of excellent finesse.
The entire company exploits the energy produced by photovoltaic systems that allow us to be energetically independent and respectful of the environment.
