Harvest

Manual. Mid September, slightly earlier than the complete ripening of the grapes.

Winemaking

Charmat - Martinotti

White vinification followed by sparkling wine.
The various phases:
- pressing of the bunches with a vacuum lung press in the absence of oxygen. In this phase the temperature must be kept under control in order not to risk ruining the delicate aromas of the must;
- cold static decantation of the must for the separation of some residues of stalks, pips and peel;
- first fermentation with indigenous yeasts, constant control of the temperature that rises in fermentation.

Aging

The second fermentation using the Charmat method lasts at least 2 months. This delicate phase requires daily monitoring to ensure that a high quality sparkling wine is obtained.

Appearance

Straw yellow color with light greenish reflections. The perlage is subtle and long-lasting.

Food Pairing

Excellent when paired with fish-based first courses and vegetable flans or finger food in general.
