Nose

Different depending on the moment. From fresh and fruity notes
typical of Prosecco that are felt at the end of fermentation,
combined with the characteristic "bread crust", it passes gradually over time
to increasingly complex notes derived from contact with yeast.

Palate

As with the scent, gentle fruity flavors are perceived at first
combined with delicate hints of yeast. Later more complexity.
Dry and pleasantly bitter taste.

Growing Conditions

Hills of Conegliano Valdobbiadene

- Average height of the vineyards: 180 - 300 m. above sea level
- Type of terrain: Heterogeneous, with a large number of hills of morainic origin.
- Clayey soil often calcareous with sandstone and marl, lean, dry and shallow especially at higher altitudes.
- Position and exposure: Hills often with steep slopes arranged in a girappoggio with a prevalent southern exposure.
- Climate: Temperate with cold winters and hot but not muggy summers.
- Average rainfall: 1250 mm with maximums in June and November and minimum in January and August. Solar radiation April-October: 92745 cal / cm2
- Training systems: Double Capovolto, Cappuccina
- Plant density: 2500 -3500 plants per hectare

Yield: Maximum 135 quintals / ha

Harvest period: 15th September - 10th October

Winemaking

Vinification: Soft pressing with pneumatic presses, static decantation of the must,
fermentation at controlled temperature (17-19 ° C) with naturally selected yeasts. Aging and resting on the noble lees in steel for at least 6 months.

Second fermentation: in the bottle, without disgorgement, as is customary in the Treviso hills for many generations.

In spring, refermentation in the bottle, in a dark room at the temperature
of 16-17 ° C. At the end of fermentation the yeasts remain on the bottom

- Very low total SO2 content: 40-50 mg / l. SO2 free: absent

Appearance

Straw yellow color. Light, fine and persistent perlage.

Food Pairing

It is highly appreciated in summer as a drink for its freshness and lightness.
It goes well with fish dishes, risotto with mushrooms or vegetables.

Service: Cool just before use at 8-10 ° C.
Veiled and cloudy, gently turning the bottle upside down.
Recommended glass type: Medium-sized white wine glass.
Storage: Bottles stand in a cool, dark place. Avoid long periods in the refrigerator.
