Winemaking
The “1924 Prosecco” is a special cuvée dedicated to the Founder Antonio Carpenè, to whom is ascribed the study and experimentation of the Prosecco
sparkling wine process. A vintage reproduction of the first Prosecco label commercialized by the Winery in 1924, this Prosecco Superiore D.O.C.G. Brut
is obtained from Glera grapes (90%) and other historical vines of the Territory (10%).
The careful phase of the sparkling process, which involves a stop in an autoclave for 25 days, allows the exaltation of the scents and characteristic aromas of a mature and stable product. Its intense aromas of unripe fruit, white flowers and fresh vegetal scents characterize a traditionally less dry and more structured version. This Sparkling Wine contains a reduced sugar content (8 g/l). On the palate, it expresses its decisive character with freshness and slightly bitter notes of almond. It is excellent with fine dishes of fish or white meats.
