Winemaking

Soft pressing. Wine stays on its lees for
four months. Following this period, the
wine is transferred to autoclaves to be
turned into sparkling wine using the
Martinotti-Charmat method at
temperature-controlled.

Aging

Aging in bottle
not less than two months.
