Growing Conditions

100% prime quality Glera grapes of the Balbi variety, grown on the company’s hilly estate by sustainable agricultural methods; all the grapes are carefully hand-harvested and selected, favouring smaller, loose-packed bunches.


Bottling

Monterossa bottle with mushroom-shaped cork stopper.

Winemaking

Short maceration on the skins, and soft pressing to extract the free-run juice from the heart of the grape. Settling and low-temperature fermentation with selected yeasts; natural clarifying process; second fermentation in a pressure tank for a very slow, low-temperature refermentation; bottling.

Appearance

Soft straw-yellow colour with greenish glints; very fine and persistent beading.

Food Pairing

Excellent as an aperitif; suitable with light Mediterranean specialities, such as starters, fish and sea-food based first courses, white meat and fresh cheese.
