Winemaking
This sparkling Prosecco is made by gently pressing of the grapes, fermenting the wine without the skins, then giving the wine a Charmat method secondary fermentation.

Appearance
It appears a pale but luminous straw yellow, and boasts a long-lingering, slender cascade of pin-point bubbles.
Food Pairing
This utterly self-confident Extra Dry sparkling Prosecco is at its best first as an aperitif wine, then with steamed or baked shellfish, prawns, or sole. It is lovely as well with moderately-sweet pastries and cakes.
