Palate
In the mouth the Williams pear stands out with a delicate foam, fine and pleasant perlage. Long and savory, mineral with a pleasant acidity. Elegance that is perceived on a sensorial level in the fine nuances floral and green apple y in the long persistence that makes you particularly appreciate the balance between acidity and flavor.
Growing Conditions
Its cradle is a valuable hilly plot from which it takes its name
and elegance. excellent exposure to
sun south. Adding to this the particular care and the time spent in the processing phases, it is easy to understand why it is the maximum expression quality of our territory.
Winemaking
It is obtained with the long Charmat method: after the first fermentation the wine it rests in the tanks until May; then it is transferred to the autoclave for making it second fermentation and remains there for 5 months unlike the normal method which provides from 45 to 60 days and then filtered and bottled in mid-November. This particular processing gives unique characteristics to the sparkling wine.
