Santo Stefano is a hamlet in the commune of Valdobbiadene and lies just to the north of the highly prized Cartizze zone. Here the grapes ripen before being picked by hand and taken to the winery to produce this precious nectar. Raising the glass to your nose, you can recognise notes of citrus fruits, white flowers and green apples. On the palate, even though the residual sugar is minimal, it is well-balanced and highly appealing. The aftertaste is harmonious and long-lasting. It goes elegantly with hors d’oeuvres and pasta or rice dishes. Excellent also just on its own. Serve at a temperature of 6-8°C.
In the gentle hills of San Pietro di Barbozza ripen the golden bunches which, after being picked by hand, are vinified to produce this Brut sparkling wine. Tasting characteristics: Refined and brilliant, with a steady, elegant perlage. There are evident fruity notes on the nose, which combine with the typical floral aromas of Prosecco. On the palate, it is delicate, dry and harmonious: a truly memorable wine. Food pairings: It makes an elegant accompaniment for hors d’oeuvres and pasta or rice dishes. Excellent also just on its own. The recommended serving temperature is 6-8°C.
Cartizze is a highly sought-after, precious nectar whose unique characteristics derive from a special hill, a small area of little more than 100 hectares that lies amid the slopes of San Pietro di Barbozza, Saccol and Santo Stefano di Valdobbiadene. In appearance it is a brilliant straw yellow. The perlage is fine and persistent, thus allowing the wine’s aromas to rise to the surface. One can detect a splendid mix of fruity and floral fragrances. This, combined with its decidedly medium-sweet taste, makes it an unforgettable pleasure to drink. Ideal for any occasion, it provides a delicious treat, whether opened as an aperitif or at the end of a meal, with fine pastries as its ideal accompaniment. We recommend you serve it at a temperature of 6-8°C, for it to show at its absolute best.
The grapes that are used to make this nectar are specially selected and ripen on the steep hillsides of a small zone in the commune of Vidor called Colbertaldo. The combination of the soil, climate and human labour produce an unmistakable sparkling wine: a precious Cru with inimitable characteristics. When you pour it into the glass, the bubbles rise in a slow, well-ordered way. The perlage is fine and elegant. If we raise the glass to our nose, we can easily pick out fruity aromas, of apples and pears. Floral tones are also evident, of wisteria and acacia blossom. Faint citrusy notes also blend in with the other delicate fragrances. On the palate, it is notably harmonious. It is rounded yet lightly acidulous, well-balanced, and nicely tangy; the flavour is persistent, as is the aftertaste. It goes perfectly with all kinds of hors d’oeuvres, fish-based dishes and our typical local recipes, such as certain soups and risottos. To show at its best and reveal all of its characteristics, it should be served cool, at a temperature of around 6-8°C. The ideal wine for celebrating your most important occasions is undoubtedly our Extra Dry Valdobbiadene Prosecco Superiore “Millesimato” DOCG. Make sure you have one of Val D’Oca’s elegant black satin-finish bottles on your table! This is one of our winery’s flagship wines: an icon for Val D'Oca and a star in the firmament of Prosecco Superiore, both in Italy and around the world. This sparkling wine, with its fine perlage and perfect balance, is produced from the finest grapes harvested in the DOCG area. The only type of grapes used is Glera (the original name of the variety better known as Prosecco), and the wine made from them is a Valdobbiadene Prosecco Superiore DOCG with a floral aroma of acacia and wisteria. It is made sparkling using the Charmat Method. It should be served at a temperature of around 6¬-8°C as an aperitif or together with delicately flavoured pasta or rice dishes, with fish, or white meat main courses.
Once upon a time Prosecco was made like this, with a blend combining several local varieties. Besides Glera (the original name of the cultivar that later became famous under the name Prosecco) some rare indigenous grapes were used that were present in the hills around Valdobbiadene: Verdiso, Perera and Bianchetta Trevigiana. Today, thanks to Val D'Oca’s passion for a tradition that should be saved and for the wine’s aristocratic, intense, semi-sweet taste, the ancient grape-mix has been revived. Thanks to the commitment of four vine-growers, some vineyards made up of small plots of the original varieties have been cultivated. The result is our Uvaggio Storico (“Historic Blend), which restores in the glass a touch of the past and the atmosphere of how life once was: simple, but rich in emotions. Life was full, just like the taste displayed by this sparkling wine of singular personality. It is no accident that this ancient blend, made sparkling by the Charmat Method, has won numerous awards. With its delightful aroma and its sweet but well-balanced flavour, it can easily be offered as an aperitif or as a wine to be served at the end of a meal, with dessert. It is important to serve it at a temperature of around 6-8°C.
