It has a sugar residue reduced to a minimum to preserve its purity. It is an elegant wine.

Winemaking
Off-skins with soft pressing fermentation
- Primary fermentation: static decantation and fermentation at a controlled temperature
- Second fermentation: 40 days
- Sparkling process: refermentation in autoclave from 25 to 50 hl "Charmat method"
Appearance
Straw-colored wine, clear, with a fine and persistent perlage.
Food Pairing
Excellent as an aperitif, it can accompany fish and shellfish dishes. The combination with chocolate-based desserts is very refined.
