Nose

On the nose it is characterised by aromas of rose, wisteria and peach.

Palate

In the mouth it is easy drinking and smooth with a long lasting finish.

Growing Conditions

Ancient, shallow soils made up of marl and white sandstone which allow free draining of rains.

Winemaking

Made using whole grapes with a soft pressing and static racking off for around 8 hours at 15° C. Fermentation in steel at a controlled temperature (15-18°).
Martinotti (or Charmat) method with Canevel Setàge protocol. Low temperature (12-14°C) refermentation and lengthy maturation on fine yeast deposits.

Appearance

Light straw in colour with a hint of green, an abundant froth and a fine, perlage.

Food Pairing

Excellent with sweet dishes such as cakes and biscuits. Ideal as an aperitif.
