On the palate, it is harmonious and dry in its lively freshness, with excellent
minerality and flavor.

Growing Conditions

The vineyards of Collalto, near Conegliano (TV), are located in the saddle of the hill in a ventilated place, always exposed to direct sunlight and with an important temperature range between day and night. This create a structured wine, which on the palate is distinguished by a long flavor and minerality, because it’s the result of a vine that grows in a clayey and compact soil.

- Exhibition: Sud.
- Soil: clayey and compact.
- Climate: Fresh Mediterranean.
- Training system: double upside down system, 3,000 vines per hectare.

Harvest

Grapes are hand-picked starting from the third decade of September.

Winemaking

Our Valdobbiadene DOCG Rive di Collalto is the first Brut Sparkling Wine, included in the three-year project of “le RIVE, la nostra FIEREZZA” which includes three different annual productions of selected “Rive”, in limited edition. It’s an exclusive project that was created to enclose unique products from particular hilly areas, all owned by Drusian Francesco, enriched by his excellent technical knowledge and by a second fermentation in stainless steel that touches 140 days.

- Vinification: in white with soft pressing. Yield 70%.
- Production method: the second fermentation takes place in stainless steel tanks, according to the Charmat method for 140 days.

- Residual sugar: 6-7 g/l
- Acidity: 5.5-6 g/l
- Sulphur dioxide: 80/95 mg/l
- Pressure: 5.5 bar

Appearance

Straw yellow colour, with greenish hints. Fine and persistent perlage.

Food Pairing

Appetizers and first courses of fish and fresh cheeses. Excellent as an aperitif
and can accompany the entire meal
