Growing Conditions

Conegliano Valdobbiadene DOCG Rive di Collalto

- PRODUCTION AREA: Col Sandago company vineyards in Susegana (TV).

- SOIL: calcareous, clayey with sandstone subsoil, relatively shallow.

Harvest

Grapes are hand-picked during the second half of September.

- YIELD: 12.000 Kg/hectare.

Winemaking

VINIFICATION: destemming and soft pressing of the grapes, cold maceration of the same at 10 °C for 36 hours. Pressing of the crushed grapes and temperature-controlled fermentation of the must at 16-17 °C.

Ageing in steel for 2-3 months.

SECONDARY FERMENTATION: the base wine is re-fermented in an autoclave et the constant controlled temperature of 16-17 °C for 90 days, this is followed by tartaric stabilization and cold filtration.

Appearance

Brilliant, straw-yellow colour, with a fine and persistent perlage.

Food Pairing

Excellent as an aperitif wine, suitable as an all-around wine, particurarly with delicate dishes and fish.
