Growing Conditions
The grapes for this wine came from our cooler hillside vineyards where the grapes ripen here slowly while keeping their freshness.
Harvest
By hand and in crates of 20kg.
Winemaking
This is the classic Prosecco, combining the grape variety's aromatics with the richness of the sparkle. Extra Dry is the true traditional style where the residual sugar is around 20 g/l, yet the wine should never taste sweet, but balanced and fresh.
The grapes were gently pressed in pneumatic presses and after a natural eight hour settling the juice was fermented by indigenous yeast in stainless steel. The second fermentation took place in pressurised tank and bottled afterwards under the same pressure to maintain its sparkle.
Food Pairing
Nothing but itself, as a refreshing aperitif, or serve this with pasta dishes with meat sauce, soft cheeses and chicken dishes.
