Growing Conditions

Glera trained on double-arched canes. Every year we choose the vineyard with the best grapes.
The soil has a boulder clay mixture with advanced level of decarbonation. The climate is pre-alpine cool temperate with average rainfall of 1250 mm/year.


Manual in crates


Bottling in the spring of the year following the harvest without dosage. Prise de mousse with spontaneous depletion of the grapes sugar.
Ageing in bottle for one year.


Pressing of the grapes, indigenous foot inoculation and fresh fermentation. Cooling of the must before the end of the fermentation.


Ageing on the yeasts over the winter.
